Kamúy: A Caribbean restaurant concept by Chef Paul Toussaint
Kamúy is named after the Taino (the Caribbean First Nations) people word for sun, and it’s the brand-new Caribbean restaurant concept brought to you by Chef Paul Toussaint that has risen in the heart of Le Quartier Des Spectacles.
Born and raised in Jacmel, Haiti, Paul Toussaint moved to Canada at age 20 to pursue a law degree. However, he eventually found himself working in the world-renown kitchen of Chef Normand Laprise’s Toque! where he discovered his passion for the culinary arts and fine-dining.
Chef Toussaint later became head chef at Restaurant Agrikol where he helped spotlight and elevate Haitian food in the city’s culinary scene. His passion for his Haitian heritage and love of food had him craving a new challenge. He wanted to offer something different to showcase all facets of Caribbean food in a new and fun concept; Kamúy.
Taking over the former Tavern F Restaurant space, Kamúy is an eatery that not only celebrates the Caribbean islands’ rich eclectic culture, but also recognizes Québec’s role in the culinary influences that form Chef Toussaint’s team (including chefs from Guadeloupe and Colombia) and the diverse communities that they represent.
Kamúy introduces to Montreal a meticulous mélange of colourful Caribbean creations that interweave Québec’s fine-dining tradition of French cuisine. This endeavor is executed by utilizing the forward-thinking techniques of local culinary talent.
The seasonal menu will focus heavily on locally sustainable ingredients, bright spices and produce typically found in the Caribbean and served in a space that reflects the colours, flavours, art, music, and general party atmosphere typical of a traditional Caribbean market.
The vibe at Kamúy will be enhanced by finely curated music (that include reggae, bachata, merengue, twoubadou, jazz, and salsa) as well as accented with Caribbean art. The space includes an indoor and outdoor eating area that align with current safety protocols.
The dining experience will guarantee to be delicious enthralling, festive and fun - Sundays will also feature a Bagatelle Brunch until 3 p.m. This unique concept of Kamúy that combines open-air art gallery and restaurant finds a perfect fit in the already vibrant area of the Quartier des Spectacles in the heart of the city.
